These muffins are, dare we say it, m-o-i-s-t, light and perfectly sweet! And the best part? Just like the traditional banana bread mix, this recipe comes together in under 5 minutes with a few simple add-ins. While you can't go wrong with the traditional recipe, this one is a MUST TRY! And an easy way to sneak some additional veggies into your kids life - IYKYK

Chocolate Chip Zucchini Bread
Makes 12 muffins or one standard loaf
What you need:
- One bag of Belly's Classic Banana Bread Mix
- 1.5 C Shredded Zucchini (about 1.5-2 zucchinis)
- 3 Eggs
- 1/4 C Oil (we love avocado oil!)
- 1/4 C Milk (we used almond!)
- 1 C Chocolate Chips - optional, but not really :)
Instructions:
- Begin by preheating your oven to 350F and preparing a standard bread pan or 12 muffin tins with liners or nonstick spray.
- Prepare the zucchini by washing it and trimming the ends. Using the side of the box grater with the largest holes, grate 1.5 cups of zucchini into course pieces.
- Use a paper towel to pat the shredded zucchini and soak up some of the excess liquid. Transfer the shredded zucchini to a medium sized mixing bowl.
- Add the eggs, oil and milk. Whisk to combine all of the ingredients.
- Add one bag of Belly's Classic Banana Bread Mix. Stir to form the batter.
- Fold in the chocolate chips.
- Transfer the batter to the prepared bread pan or muffin tin. Baking at 350F for 50-60 minutes (zucchini bread) or 20-22 minutes (zucchini muffins) or until a toothpick inserted in the middle comes out clean.
- Allow bread to cool before digging in. Enjoy!
Additional Tips:
If not adding chocolate chips, you may want to add a bit more sweetness. Try reducing the milk and adding a few tablespoons of maple syrup.
