Warning: After trying these apple fritter waffles, you may never want to eat traditional waffles again. The added crunch of the shredded apples and warm hints of cinnamon and nutmeg are the perfect compliments to our collagen pancake mix. We can't wait for you to give this one a try!
Apple Fritter Waffles & Cinnamon Sugar Glaze
What you'll need:
- 1 package Belly Collagen Pancake & Waffle Mix
- 5 eggs
- 1/2 C Oil (I used avocado oil)
- 1/2 C Water
- 1 + 1/2 C Shredded Apple (about 2 medium apples)
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
For the Glaze (Optional):
- 1 C Powdered Sugar
- 2 TBSP Milk
- 1/4 tsp Vanilla Extract
- Dash of Cinnamon
Instructions:
- Begin by shredding the apples. I peeled mine (optional) and then used a large cheese grater to shred the apples.
- In a large mixing bowl, combine the eggs, oil and water. Whisk to combine.
- Add 1 package of Belly Collagen Pancake & Waffle mix, cinnamon and nutmeg. Continue to whisk until all ingredients are combined.
- Fold in the shredded apples.
- Spoon the batter onto a preheated/greased waffle iron. Cook according to waffle iron instructions or until waffles are crisp & golden brown.
- While the waffles are cooking, in a small mixing bowl, combine the ingredients for the glaze.
- Drizzle the glaze over the waffles, garnish with additional apple slices (optional) and enjoy!
Additional Notes:
The warm notes of cinnamon and nutmeg in these waffles allow them to pair well with a variety of toppings, or they can be enjoyed all on their own! Traditional maple syrup or a spiced jelly would be amazing if you're looking for an alternative to the cinnamon glaze.
