Recipe of the Month - Chocolate Chip Banana Bread

Recipe of the Month - Chocolate Chip Banana Bread

In honor our newest flavor drop, you know we had to whip up something banana bread inspired for this months recipe of the month! In fact, when developing our banana bread mix, we went back and forth whether or not to make it a chocolate chip banana bread mix or stick with original. Considering how easy it is to toss some chocolate chips into the batter, we decided to go with the original flavor. But that's not stopping us from introducing you to our drool-worthy chocolate chip banana bread! We hope you're as obsessed as we are!

Chocolate Chip Banana Bread

What you'll need:

  • 1 package Belly Collagen Banana Bread Mix
  • 2 bananas - the more ripe, the better!
  • 3 eggs
  • 1/3 C Oil (I used avocado oil)
  • 1/3 C Milk (I used almond milk)
  • 3/4 C Chocolate Chips

Instructions:

  1. Preheat the oven to 350F. Prepare a bread pan by spraying it with non-stick spray or lining it with parchment paper.
  2. Begin by peeling the bananas and placing them into a medium size mixing bowl. Using a fork (or potato masher!) mash the bananas until no large clumps remain.
  3. Add the eggs, oil and milk. Whisk everything to combine.
  4. Add one package of Belly Collagen Banana Bread Mix. Stir until well combined.
  5. Fold in the chocolate chips.
  6. Transfer the batter to the prepared bread pan. Bake at 350 for 45-55 mins or until a toothpick inserted in the middle comes out clean.
  7. Allow the bread to cool before cutting. Enjoy!!

Additional Notes:

Not a dark chocolate fan? Mix it up by adding white chocolate or butterscotch chips instead! A handful of nuts is also a great way to add some additional crunch. When it comes to dressing up this mix, the possibilities are endless!
