Recipe of the Month - Easter Brownie Parfait

PSA for all the busy parents out there - Easter is THIS MONTH. Sure, it might not be until the very last day of this month, but my guess is it will be here before we know it. And as you start to plan your Easter menu, we have the perfect (easy!) dessert to brighten up your holiday table. Say hello to this month's Easter Brownie Parfait.

You've got Options:

The beauty of this recipe is you can customize it to make it as easy as you wish! For example, you can use my lazy girl hack and use store bought pudding (whoops!), or you can make it from scratch.

Not a pudding lover? Swap it for chocolate mousse, yogurt, chia pudding or whipped cream! Combine any of these with brownie bites and your favorite Easter candies, and you're sure to have a delicious dessert your favorite peeps will love.

Ok, let's get to the recipe!

What You'll Need:

  • 1 bag of Belly's Collagen Brownie Mix
  • 2 eggs
  • 1/2 C butter
  • 1 tsp vanilla
  • 1 C chocolate pudding (See ideas for substitutions above!)
  • Your favorite Easter candies
  • Stemless wine glass, mason jar or other cup/container. A bowl would work just fine!

Instructions:

  • Preheat oven to 350 F and line an 8 x 8 baking dish with parchment paper.
  • Combine eggs, butter and vanilla in a medium mixing bowl. Stir to combine.
  • Add 1 bag of Belly's Collagen Brownie Mix. Stir to combine.
  • Transfer the brownie batter to the lined 8 x 8 baking dish. Bake for 24 - 28 minutes or until a toothpick inserted in the middle comes out clean. Allow brownies to cool completely before cutting into bite sized pieces.
  • Begin assembling the parfait! Start with a layer of chocolate pudding (or whatever filing you're using!). Top with a handful of brownie bites and a sprinkle of Easter candies.
  • Repeat! I did two layers when making my parfait, but you can add as many or as few as you wish.
  • Enjoy!
