If pancakes are part of your morning routine, prepare for this festive upgrade!
These gingerbread pancakes are every bit as easy to make as traditional pancakes but with the sweetest hints of molasses, cinnamon & cloves. My two-year-old devoured our leftovers and I know your family is going to love them too!
Gingerbread Pancakes 🥞
(makes 20 pancakes)
What you'll need:
- 1 package Belly's Pancake & Waffle Mix
- 1/2 C milk
- 4 eggs
- 3 TBSP molasses
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp cloves
Instructions:
- In a medium mixing bowl, combine the eggs, milk, molasses and spices. Whisk to combine.
- Add one package of Belly's Pancake & Waffle Mix and whisk until combined.
- Heat a non-stick griddle or large pan over medium-high heat. Once hot, grease, spray, or melt butter on the hot surface.
- Ladle the pancake mix onto the griddle. Flip the pancakes over once the edges begin to bubble or appear defined and continue cooking for another minute.
- Remove cooked pancakes from the pan and transfer to a plate. Add your favorite toppings (we opted for butter & maple syrup and they did not disappoint!) and enjoy!
Additional Tips:
While I absolutely love how these turned out with the combination of cinnamon, ground ginger, cloves and nutmeg, you can get creative with what spices you include! These just happen to be the spices I had one hand - allspice and others would pair nicely as well!
