Peppermint Chocolate Chip Cookies 🍪
(makes 14 cookies)
What you'll need:
- 1 package Belly's Chocolate Chip Cookie Mix
- 1/2 C butter, softened (sub oil for dairy free)
- 1 egg
- 3 TBSP Cocoa Powder
- 1 tsp peppermint extract
- 1/2 C peppermint chocolate chips (optional, but so good!)
Instructions:
- Heat oven to 350F and prepare a cookie sheet with parchment paper or nonstick spray.
- In a medium mixing bowl, combine the butter, egg and peppermint extract. Stir to combine.
- Add the cocoa powder and one package of Belly's Chocolate Chip Cookie Mix. Stir until a dough begins to form.
- Fold in the peppermint chocolate chips.
- Scoop the dough by the heaping tablespoon and transfer it to the cookie sheet.
- Bake for 12 to 14 minutes. Remove cookies from oven and allow them to cool for a few minutes before removing them from the cookie sheet. Enjoy!
Additional Tip:
If you don't have peppermint baking chips you can also use crushed up candy canes or peppermint bark to amplify the peppermint flavor and crunchy texture.
