Recipe of the Month - Peppermint Chocolate Chip Cookies

The best part? This will be the easiest thing you whip up this holiday season! With just a few simple tweaks you can transform Belly's classic chocolate chip cookie mix into this festive treat. Happy Holidays & Happy Baking! 

Peppermint Chocolate Chip Cookies 🍪

(makes 14 cookies)

What you'll need:

  • 1 package Belly's Chocolate Chip Cookie Mix
  • 1/2 C butter, softened (sub oil for dairy free)
  • 1 egg 
  • 3 TBSP Cocoa Powder
  • 1 tsp peppermint extract
  • 1/2 C peppermint chocolate chips (optional, but so good!)

Instructions:

  1. Heat oven to 350F and prepare a cookie sheet with parchment paper or nonstick spray.
  2. In a medium mixing bowl, combine the butter, egg and peppermint extract. Stir to combine.
  3. Add the cocoa powder and one package of Belly's Chocolate Chip Cookie Mix. Stir until a dough begins to form.
  4. Fold in the peppermint chocolate chips.
  5. Scoop the dough by the heaping tablespoon and transfer it to the cookie sheet.
  6. Bake for 12 to 14 minutes. Remove cookies from oven and allow them to cool for a few minutes before removing them from the cookie sheet. Enjoy!

Additional Tip:

If you don't have peppermint baking chips you can also use crushed up candy canes or peppermint bark to amplify the peppermint flavor and crunchy texture.
