It's officially February! And for anyone in need of a reminder, there are only 13 more sleeps until Valentine's Day.
Whether you'll be celebrating with your family, your significant other or you favorite galentines, hearts and chocolate always have a place on the menu. Especially in cookie form.
The best part about this recipe is that it's especially easy to make. All you need is a heart-shaped cake mold and some fun decorations to transform our traditional Belly cookies into a festive cookie cake. Keep reading for the full recipe!
Valentine's Day Cookie Cake
What You'll Need:
- 1 package - Belly Chocolate Chip Cookie Mix - (currently 25% off!)
- 6 TBSP butter or oil
- 3 TBSP dairy or non-dairy milk
- 1 tsp vanilla extract
- Heart-shaped cake mold - here is the one I used
- Toppings of your choice!
Instructions:
- Begin by preheating your oven to 350F. If using a metallic cake mold, grease the dish before adding the dough.
- Add the softened butter or oil, milk and vanilla extract to a medium mixing bowl. Whisk to combine.
- In the same bowl, add the Belly Chocolate Chip Cookie Mix. Continue mixing until a soft dough forms.
- Transfer the dough to a 7 or 8 inch cake mold. Press firmly to equally distribute the dough throughout the mold.
- Place the mold into the oven and bake for ~20 minutes, or until the top of the cookie begins to brown and crisp. Note, baking times will vary based on the size of the mold and the thickness of the cookie cake. Smaller molds will require less time.
- Remove the cookie cake from the oven and allow it to cool completely before removing it from the mold. This will prevent the cookie cake from cracking.
- Time to decorate! I used a combination of white & red frosting, piped around the outside of the cookie, plus some festive Valentine's Day sprinkles. While frosting on a chocolate chip cookie isn't a traditional topping, I promise it won't disappoint.
You've got Options:
- I used the medium sized cake mold (7 inch mold) from the link shared above to make the large cookie cake. However, you could also make multiple smaller cookie cakes with the smaller mold. I ended up making a second batch of cookies in order to make 2 additional smaller cookie cakes. Whatever your heart (no pun intended) desires!
