Recipe of the Month: Viral Cookie Brownies

If using our brownie mix to make cookies is wrong, we don't want to be right. Enjoy your favorite brownies in handheld cookie form with the most perfect, crispy cookie shell. The added pop of chocolate chips will have you questioning if you'll ever eat a regular brownie again!

Viral Collagen Brownie Cookies

(makes 10-12 cookies)

What you'll need:

  • 1 package Belly Collagen Brownie Mix
  • 1/3 C butter, softened
  • 1 egg + 1 egg yolk
  • 1 tsp vanilla extract
  • 1/2 C chocolate chips (optional but soo good!)

Instructions:

  1. Preheat the oven to 350 F and line a baking sheet with parchment paper.
  2. In a medium mixing bowl, combine the softened butter, eggs and vanilla extract. Whisk to combine.
  3. Add one package of Belly's Collagen Brownie Mix. Mix until a dough begins to form. Note, this dough will be a little stickier/thicker than your average cookie dough.
  4. Fold in the chocolate chips.
  5. Drop the cookie dough by the spoonful onto the prepared baking sheet. Place in the oven and bake for 12-14 minutes.
  6. Remove from oven and allow cookies to cool before removing them from the cookie sheet. Enjoy!!

Additional Notes:

  • The cookies tend to spread a bit more when baking than a traditional cookie. I found that cooling the cookie dough in the fridge for 20 minutes before baking helped to minimize the spread a bit.
  • In place of (or in addition to!) and handful of chopped walnuts would also be amazing for an added crunch!
